Christmas Dessert Recipes - Cranberry Velvet Freeze Dessert

A floating pink cloud bursting with cranberries, cherries and marshmallows.

2 (16 oz.) cans whole berry cranberry sauce
1 (20 oz.) can crushed pineapple, drained
1 (8 oz.) can crushed pineapple, drained
1 pkg. miniature marshmallows
1 cup green maraschino cherries, quartered
1 cup red maraschino cherries, quartered
1 teaspoon lemon juice
3 cups heavy whipping cream, whipped

Directions

In a large bowl, combine the cranberry sauce, pineapple, marshmallow, cherries and the lemon juice. Fold in the whipped cream. Spoon the mixture into an ungreased 13x9x2-inch dish. Cover and freeze overnight. Remove from the freezer at least 10 minutes before ready to serve.

Makes 12 to 16 servings.

Christmas Dessert Recipes: Apple Pie in a Goblet Dessert

Here's a novel way to serve fresh apples - very light and elegant.

3 large tart apples, peeled and coarsely chopped
1/4 cup sugar
1/4 cup water
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
12 shortbread cookies, crushed
2 cups vanilla ice cream
Whipped cream

Directions

In a large saucepan, combine the apples, sugar, water, cinnamon and nutmeg. Bring all to a boil. Reduce heat; cover and simmer for 10 minutes or until the apples are nice and tender.

Uncover the pot and cook for another 9 to 11 minutes, or until most of the liquid has evaporated. Remove pot from heat.

Set up four goblets or parfait glasses.

In each goblet, layer one tablespoon of cookie crumbs, 1/2 cup ice cream and 1/4 of the apple mixture. Top each dessert off with the remaining cookie crumbs and a large dollop of whipped cream. Garnish with an apple slice, if desired.

Christmas Dessert Recipes: Christmas Trifle Dessert

This colorful trifle dessert looks as great as it tastes.

1 (8 oz.) can crushed pineapple
3 medium firm bananas, sliced
1 (10 oz.) jar red maraschino cherries
1 (6 oz.) jar green maraschino cherries
3 1/2 cups store bought eggnog, chilled
2 pkgs. Instant vanilla pudding mix
1 prepared angel food cake, cut into 1-inch cubes
1 (16 oz.) carton frozen whipped topping, thawed
1/4 cup walnuts, chopped, optional

Directions

Drain the pineapple, reserving the juice.

Dip the bananas into the pineapple juice. Drain and discard the pineapple juice.

Set aside the pineapple, bananas, three red cherries and three green cherries. In a bowl, whisk together the eggnog and pudding mixes; mix for 2 minutes, or until slightly thickened.

Place half of the pudding mixture into a 4-quart glass serving bowl. Layer half of the bananas on top. Layer half of the pineapple on top. Layer half of the cherries on top. Layer half of the cake cubes on top. Layer half of the whipped topping on top. Repeat layers.

Garnish with reserved cherries and walnuts, if desired.

Makes 16 to 20 servings.
